When I studied polarity therapy Dr. Stone’s philosophy on nutrition was “ to eat as close to your food source as possible.” He had his own stone mill for grinding wheat. While most of us have neither the time nor the inclination to invest that much in our food, the main idea is to eat fresh produce as close to its source as possible. I’ve tried to keep his philosophy in my back pocket although it is difficult at times. I simply try to eat close to the food source. Living in New England , the summer offers better options to buy locally grown fresh foods. On this ride and on the road were were able to stop at local farm stands and pick up fresh peaches and other produce however it has been a challenge to find nutritious food that requires no refrigeration for our travels.
